CAS Number
INS Number
IUBMB Number  3.4.22.32
Technological Function [Category (for enzyme preparations only)]  Food enzymes (including immobilized enzymes)
Description
Functional Use  Stem bromelain: Broad specificity for cleavage of proteins, but strong preference for Z-Arg-Arg┼NHMec amongst small molecule substrates.Fruit bromelain: Hydrolysis of proteins with broad specificity for peptide bonds. Bz-Phe-Val-Arg┼NHMec is a good synthetic substrate, but there is no action on Z-Arg-Arg-NHMec (c.f. stem bromelain)
